Low Carbs Begone!

The Pandemic Kitchen

Izzy inspired me with her foccacia bread topped like pizza. The crust was so close to what I got in Siracusa, and what my nanny made for me when I was a kid. Low carb meals be damned! I felt like with some minor changes I could come close to duplicating the crust I had in Sicily, or at least come close to Umberto’s of New Hyde Park. A tall order for my first from scratch pizza.

I made my home made oven roasted meat sauce with italian sausage and ground sirlion. I made enough for several meals and to use it as the pizza sauce.

The dough is so easy to make. yeast, water, flour olive oil, mixed with a spatula. Then you wait.

It’s alive!

Bake with just the sauce for 10 minutes at 500, then add the cheese and sausage.

Top With Ricotta and Mozzeralla – Sausage (from Ottomanelli’s on half).

Then continue baking until done.

it was really good.

Not much in the way of leftovers.
